Low Calorie Chipotle Chicken Pasta Recipe
This spicy pasta dish is healthy and hearty, offering a delicious kick thanks to our chipotle rub. It's a simple dish you can prepare for dinner, with leftovers making a fantastic low-calorie lunch to take to work with you the next day.
Shopping list
- 80g of pasta per person
- 2 diced chicken breasts
- 1 large red onion
- 2 peppers (colour of your choice)
- 350ml of passata
- 2 cloves of garlic
- 1.5 tbsp of chipotle (add more or less, depending on how hot you want it)
- 2 tbsp of tomato puree
- 250ml of vegetable stock
- 4 tbsp of Worcester sauce
- 1.5 tbsp of balsamic vinegar
- Spicentice Chipotle Rub
Cooking
- Fry the vegetables on a medium heat until they're softened, and then add the garlic and chicken. Continue to cook on a medium heat until the chicken is almost cooked through
- Add the passata, stock and puree and bring to the boil
- Mix in the Spicentice Chipotle Rub, balsamic vinegar and Worcester sauce, and leave the dish to thicken for around 25 minutes, stirring occasionally
- Add some boiled pasta and mix well. Serve on a plate and garnish with coriander
