Prepare the tzatziki by peeling and grating the cucumber and then squeezing the water out. Finely chop the mint and coriander leaves and add to the natural yogurt. Mix all the ingredients in a bowl, season with sea salt and black pepper, and refrigerate.
Add the chicken to a bowl with the garlic and lemon juice, along with a pinch of salt and the Spicentice Souvlaki spices. Stir together with the 1 tbsp Oil and 2 tbsp of water. Leave to marinade for 30 mins or more. Meanwhile, soak the wooden skewers in water.
Thread the chicken pieces onto the wooden skewers and cook under a medium grill or on a barbecue for 10 minutes on each side or until the chicken is cooked and slightly charred.
Toast the flatbread/pita bread and add salad leaves, sliced onions and tomatoes. Then add the Souvlaki chicken, drizzle over the tzatziki sauce and enjoy!
