Heat oil/low cal spray in a large pan over a medium heat and add contents of Sachet 1. Fry for a few seconds.
Next add onion and fry until lightly browned. Then stir in chopped ginger
Now add cauliflower, potatoes, peas and tomato. Add contents of Sachet 2 with 1 tsp salt.
Pour 150ml cold water and stir. Cover pan with lid and cook approximately for 15-20 mins or until vegetables are tender.
Finally check seasoning and garnish with fresh coriander.
